THE HISTORY OF HOTEL FREDERIKSMINDE

Hotel Frederiksminde is idyllically situated in peaceful and scenic surroundings – just 50 metres from the water’s edge at Præstø Fjord. Here, nature, light and the views are an integral part of the experience, and the historic hotel building provides the setting for a stay centred on presence, tranquillity and quality.

The building dates from the late 19th century and has been carefully restored with great respect for the building’s history, architecture and cultural heritage. The restoration has focused on preserving the site’s original charm and creating a timeless atmosphere where history and modern comfort go hand in hand.

Hotel Frederiksminde offers 19 individually decorated rooms, each with its own distinctive character and furnished with classic furniture, antiques and high-quality materials. The hotel offers 13 double rooms, 3 single rooms, 2 junior suites and 1 suite.

Restaurant Frederiksminde has been awarded one Michelin star and draws inspiration from the very best that South Zealand’s natural surroundings have to offer. The kitchen works with seasonal produce from the sea, forest and fields in close collaboration with local producers, fishermen and growers. The cuisine is based on uncompromising craftsmanship, respect for the ingredients and a responsible focus on local resources and the natural rhythm of the seasons.

Hotel Frederiksminde is managed by Silje Brenna.

Mulla Yalcin has been head chef since 1 January 2026. With great professionalism, precision and respect for Frederiksminde’s gastronomic heritage, he is further developing the restaurant’s cuisine with a focus on flavour, sustainable principles and an even closer connection to local ingredients and producers.

In 2026, Hotel Frederiksminde was one of the first restaurants in the Nordic region to be selected for the Michelin Guide’s ‘Mindful Voices’. This distinction is awarded to restaurants that inspire through their values, responsible approach and strong local roots. Alongside its Michelin star, this selection underlines Frederiksminde’s ambition to create world-class gastronomic experiences whilst respecting people, nature and the local community.

For a number of years, Hotel Frederiksminde has received the highest reviews from publications including *Børsen*, *Politiken* and *Berlingske*, and is today regarded as one of Denmark’s leading gastronomic destinations.
